A couple of weeks ago, my boyfriend was craving a cake and wanted to make one, but had no recipe. He asked me to google one for him and as I couldn’t find any for which we’d have the ingredients, I just tried to come up with one instead. I like to use fruits in my recipes, but the only fruit we had at home were oranges…an abundance of oranges actually so I thought ‘Why not use those’? My boyfriend was very sceptical about it and didn’t even want to give it a try. Luckily, in the end I managed to convince him. The cake came out so nicely we’ve not been baking anything else since. Also because oranges here in Spain are incredibly cheap.

 


Ingredients:

1 cup = 250ml

3 oranges

2 cups spelt flour

½ cup cocoa

½ cup cane sugar

3 sp coconut oil

1 tsp baking soda

A pinch of salt

Preparation:

Peel the oranges. Mix all the ingredients together using a blender to form a dough. Put it on a tray and bake for about 45 minutes on 175°C.


Tip: I’ve tried to make the brownies by mixing spelt flour with oats/ corn flour and it turned out even softer! The ratio is 1:1 🙂
